We were contacted not too long ago by a restaurant in downtown Chicago called The Girl and The Goat, the restaurant and bar. They had a situation on their back bar which is what you are looking at now.  It was cluttered and they needed a renovation.
They wanted something that would look better and work better.  The three things that they asked for were number one, a better look; number two, wine bottles on their sides; and number three, a larger refrigerated area.

We noticed down below which is the part that you can’t see down here, that there is a small refrigerator in the center.  But that’s all the refrigerated area they had.  Here is another photo of what the back bar looks like there you can see the refrigerated area a little bit better and here is the back bar photo.

Now we are going to look at the plans that we came up with.  This is the overhead view of the commercial custom wine cellars Chicago.  Elevation A is the two side walls, (elevation) C is beside the refrigerated area, and back here is where we added our cabinet.

On elevation A is simple 750 racks, down below is the cabinet space that they currently had and kept.  On elevation C, we have two rows of individual bottles on each side.

You can see this is the overhead view.  Here is an area that was built where the wine cabinets go into.  Above the area, we ended up doing the X-bins and a shelf area above.  You’ll see that in the photos to come.  And here is another view of the racks in the way that we have them put in.
We are going back to the photos and moving along here.  This is another photo of the before, and here is during.  We partnered with big city builders, our contractors in the Chicago area that we used quite frequently.  They tore everything out above the cabinets.  They added everything new above, stripped it all down, and re-supported the countertops in any area that could possibly get wet.  They covered the surfaces with a rubberized protectant or a silicon seal.

This is a Climagan Diva 315 Wine Cabinets.  We are going to show you some pictures of that as well.  There is the back of the bar as it was finished.

Now our Climagan Wine Cabinets right here, the 315.  What we did is we used the basic package and we added on another, I believe, 7 shelves, making it a total of 15 shelves.  It is a muti-temperature wine cabinet and we included that with the package.

Wine Cellar Refrigeration System Needs Exhaust Room or Environment

Usually, when people discuss wine cellar refrigeration systems the focus of discussion is on the inside of the wine cellar room (like temperature, air circulation, the location of the custom wine cellar, etc.). Although these things are very important to storing wine, you need to remember that a wine cellar unit is basically an air exchanger, which means that while it is producing cool air into the wine storage room, it is also releasing hot air into the exhaust environment.

All Types of Wine Cellar Cooling Units Have an Exhaust Room/Environment

All wine cellar cooling units have an exhaust room or environment. In the case of a self-contained, through-the-wall wine cellar cooling unit, the exhaust environment is the adjacent room built to receive the exhausted hot air (unless the air is ducted elsewhere). In the case of ducted split type cellar refrigeration systems, the exhaust environment can be the garage or outside. These cooling units have their exhaust environment located away from the custom wine cellar.

Why A Wine Cellar Cooling Unit Exhaust Room is Important

There is a need to give importance to wine cellar cooling system exhaust rooms or environments because a cooling unit’s ability to cool a wine storage room is directly related to the temperature of the exhaust room. Since a wine cellar refrigeration unit is an air exchanger, cold air is basically produced inside the cellar and hot air is exhausted. This exchange creates a temperature difference between the two environments.

It is imperative that a refrigeration unit is able to maintain at least a 30-degree Fahrenheit temperature differential between the custom wine cellar and its exhaust room. The temperature differential is calculated by subtracting the cellar temperature from the exhaust room temperature. For example, if a custom wine cellar is set at a temperature of 55 degrees Fahrenheit, its exhaust room should not get higher than 85 degrees Fahrenheit in order to have a maximum of 30 degrees Fahrenheit temperature differential. If the exhaust room does get warmer, for example, 95 degrees Fahrenheit, then the cellar could get as cool as 65 degrees Fahrenheit to maintain a 30 degrees temperature differential.

This temperature differential needs to be maintained at the appropriate levels because it greatly affects the ability of a cooling unit to cool the inside of a custom wine cellar. If a wine cellar refrigeration unit fails to provide the ideal temperature levels, your wines will suffer and get damaged.

I’d like to take you on a tour of our latest custom wine cellars in Atlanta, Georgia project. This residential wine cellar was actually created in a high-rise condominium.  It created a few situations but nothing we couldn’t overcome.

This particular residential wine cellar holds a total of 997 bottles.  The room that this wine cellar was created in had four structural columns.  Actually, I believe two of the columns may have been structural, the others were not, but in order to make this look correct, we kept the columns and worked around them.

We added custom wine racks between the columns on the two sides of the back wall and then on the front wall some of the columns are 15 inches deep, we added a horizontal rack.  You’ll see that as we go along with the drawings.

You’ll notice in the drawings each elevation is designated by a letter.  The left and right walls are elevation A, the back wall is elevation B and the front sections here are elevation D, I don’t know what happened to elevation C.
Elevation A, the left and right walls have X bins on the bottom.  These are lattice X bins so it has a support rack where the back wall comes out this is not seen in the room when it’s completed.  You have a high reveal display row with a light balance above it and 750ml individual bottles above that.   These custom wine racks we made are 11 3/4 inches deep, simply so that they fit in with the columns.  You have a 1 1/2 inch toe kick and a 2 1/4 inch crown molding.

We’ll go to elevation B, the back wall.  We have a tall arch with a pot light opening and light valances over the display row, 750ml bottles up above, three X-cubes, and room four actually for case storage.  This bottom section is double deep.  Therefore, your X- bins are double deep as well as your case storage. It includes a tabletop area; the upper section with the 750s is single deep.

The elevation D is the little area right where you come into the room, next to the first columns on the left to the right.   Here we have horizontal display racks where your bottles are stored horizontally.

This is the overhead view of the room.  You can see your bottles can go in from the ends on this particular horizontal rack.

This is the back wall, you can see that we have lattice X bins and lattice case storage below.  Looking toward the custom wine cellar door, you can see that we have used the Tuscan door; it’s a square door with arched glass.  The whisper cooling unit is located above the custom wine cellar door.

This is your left wall and this is your right wall and back wall, and you can see we have the lattice bins, the 750s above, and the arch.

We are going to do a quick walk of some of the completed photos.  Here you can see the door.  This door is a Tuscan and Knotty Alder has the black hand-forged wrought iron, has a square top and arched glass and the stain is early American with number 850 moldings.

This is the back wall.  Our racks are in Premium Redwood with a lacquer that brings out the color of the redwood.   Here you have the left wall showing the lattice bins and individual bottles and here you have the right wall.
